in this entry, i'm going to make it short and sweet. let's just say that i'm in my lazy mode right now. just counting on the days when I will be jetting off to denpasar, bali indonesia with my beautiful family for a well deserved holiday. we have worked hard for the whole year. its time to take a break.
based from the title of this post, i made this dish last week. i know, i know. i should have shared it earlier. thousand apologies. but its better late than never. i got the recipe from one of my cookbooks, The Best of Chef Wan. i made several changes to suit hubby's taste bud. the recipe is down below.

| Chicken in Fermented Soy Bean / Ayam masak Taucho |
recipe:
200-300g of fillet chicken breast, cut into medium size chucks
1-2 teaspoon of cornflour
1 teaspoon of light soy sauce
1/2 teaspoon sugar
2 shallots, slice
3 cloves of garlic, slice
2-3 tablespoon basic sambal
3 tablespoon of fermented soy bean / taucho, lightly mashed with a spoon
1 small packed of ready to eat cashew nuts
a handful of sweet beans, cut into halves
3 baby corns, cut into quarters
water, depend whether you want to make the dish dry or with some sauce
1 tablespoon of soy bean oil
salt and sugar to taste
step:
- marinade the chicken with cornflour, light soy sauce and sugar. leave it in the chiller of about an hour.
- in a pre-heated pan, add oil and fry the shallots and garlic til soft.
- add the sambal and stir.
- take the chicken out from the chiller and add to the pan. stir well.
- add the fermented soy bean and water. stir and bring it to a simmer.
- let the chicken cook for about 10 mins before adding the sweet bean and baby corn. wait for another 5 minutes to let the vegetables cook.
- add the cashew nuts and season the dish according to your taste.
- best served with a bowl of white fluffy rice. yummy!
